Looking for a quick, healthy, budget friendly meal? Look no further than these cheap and cheerful chicken noodles which are ready in only 15 minutes!

Ingredients:
- 1 teaspoon olive oil
- 1 spring onion, finely sliced (or you could use any onion or leeks)
- 1 carrot, grated
- 1 handful spinach, chopped
- 1 teaspoon garlic
- 1 chicken stock cube
- 1/2 teaspoon of chilli powder or curry powder
- Handful of sliced cooked chicken (or any other leftover meat)
- 1 nest of noodles (one that just needs added to hot water)
- 1 teaspoon sesame seeds
Method:
1. Add the noodles in a bowl with boiling water. Place a plate on top and leave for 5 minutes.
2. In another bowl, combine the oil, veg, leftover chicken, spices, stock cube with half a mug of boiling water.
3. Drain the noodles before adding to the bowl with veg and stir well.
4. Add a sprinkle of sesame seeds for some extra fibre and enjoy!
Top tips
This meal will keep for 24 hours in the fridge. Just reheat in the oven or microwave until piping hot.
Using leftovers helps to reduce food waste and saves you money. You can use any leftover protein such as ham or turkey. You could also make this plant based by using tofu instead.
