This easy healthy lasagne recipe is a comforting, high-protein and high-fibre meal made with simple ingredients like lentils or mince, vegetables and a rich tomato sauce. Perfect for batch cooking, this lasagne is ideal for meal prep, family dinners or freezing for later, giving you a balanced and satisfying meal with minimal effort.

Ingredients
For the Bolognese sauce:
- 1 tbsp olive oil
- 2 white onions, diced
- 4 carrots, peeled and finely chopped
- 8 mushrooms, diced
- 2 cloves garlic, crushed
- 1 tsp oregano
- 1 tbsp tomato purée
- 1 tin chopped tomatoes
- 1 tin green lentils (drained) or 250g mince (beef or turkey)
- 250ml reduced salt stock (vegetable or beef)
- 1 tbsp reduced salt soy sauce
For the lasagne layers:
- 6 lasagne sheets
- 1 jar béchamel sauce
- Mozzarella cheese
Method
Step 1: Make the Bolognese
- Heat the olive oil in a large pan over a medium heat.
- Add the onions and cook for 8–10 minutes until softened.
- Stir in the garlic and cook for another minute.
- Add the carrots and mushrooms and cook for 5–10 minutes until softened.
Step 2: Build the flavour
- Add the lentils or mince, oregano, tomato purée, chopped tomatoes and soy sauce. Stir well.
- Pour in the stock and bring to the boil.
- Reduce to a simmer and cook for 30 minutes, allowing the sauce to thicken.
Step 3: Assemble the lasagne
- Preheat the oven to 190°C.
- In an ovenproof dish, layer:
- Bolognese
- Lasagne sheets
- Béchamel sauce
- Mozzarella
- Repeat for 2 layers, finishing with béchamel and plenty of mozzarella on top.
Step 4: Bake
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for a further 15–20 minutes until golden and bubbling.
Step 5: Serve
- Allow to rest for 5–10 minutes before serving with a side salad or vegetables.

Eating for one?
Make the lasagne in smaller portions and freeze before cooking. Cook from frozen for 45–60 minutes until piping hot.
