This easy sea bass recipe is a quick and healthy dinner packed with fresh flavours from garlic, ginger, chilli and roasted vegetables. Crispy pan-fried sea bass is served with colourful roasted veg and your grain of choice for a balanced meal that’s perfect for busy weeknights while still feeling restaurant-worthy.

Ingredients
For the Sea Bass
- 2 sea bass fillets, skin scored 3 times and seasoned with black pepper
- 1 tbsp olive oil
- 1 thumb-sized piece ginger, peeled and finely chopped
- 2 garlic cloves, finely chopped
- 1 red chilli, deseeded and finely chopped
- 4 spring onions, sliced
- 1 tbsp reduced salt soy sauce
For the Roasted Vegetables
- 2 bell peppers, sliced
- ½ courgette, sliced
- 1 red onion, sliced
- 1 tbsp olive oil
- Black pepper, to taste
To Serve
- Grain of choice (such as couscous, rice, quinoa or noodles)
Method
- Preheat the oven to 200°C.
- Add the peppers, courgette and red onion to a baking tray.
- Drizzle with olive oil, season with black pepper and mix well.
- Roast for 15–20 minutes until softened and slightly golden.
- Around 10 minutes before the vegetables are ready, heat olive oil in a frying pan over a medium heat.
- Place the sea bass fillets into the pan skin side down and cook for 5 minutes until the skin is crispy.
- Carefully turn the fish over and cook for another 1–2 minutes until cooked through.
- Remove the sea bass from the pan and place onto serving plates.
- Add the garlic, ginger, chilli and spring onion to the same pan and cook for 2–3 minutes until fragrant.
- Stir through the soy sauce and spoon the mixture over the sea bass fillets.
- Serve the sea bass with the roasted vegetables and your grain of choice.
