Fruity French Toast

  • 2-4 slices of thick bread (white works best but any will do)
  • 4 eggs beaten
  • 1 tsp cinnamon
  • 4 tablespoons of Greek yoghurt to serve
  • 2 handfuls frozen berries
  • 1 teaspoon lemon juice
  • 1 teaspoon sugar or sweetener
  • 1 tablespoon water
  • 2 tablespoons chia seeds
  1. To make the berry compote, add the berries, lemon juice, water, chia seeds and sugar to a small pot over a medium heat. Cook for 10-15 minutes stirring regularly until you get a jammy consistency.
  2. Add the cinnamon to the egg in a large dish and then soak the bread for around 5 minutes, turning halfway.
  3. Fry the bread over a medium heat until golden brown and serve with yoghurt, berry compote and additional toppings of choice.
