These Greek style halloumi flatbreads are bursting with flavour. Perfectly balanced with hot honey and a cool and creamy Greek yoghurt, this is another Mediterranean recipe to have on repeat.

Ingredients
- 1 tsp olive oil
- 30g halloumi
- 1 tbsp hot honey
- 1 tsp garlic, crushed
- Handful spinach, roughly chopped
- 4 cherry tomatoes, halved
- 1/4 cucumber, diced
- 1 tablespoon Greek yoghurt
- 1 wholemeal pitta bread or flatbread
Method
- In a frying pan or airfryer, cook the halloumi with the oil and honey for around 10 minutes.
- Toast the pitta or flatbread for 1-2 minutes, allow to cool slightly and cut in half.
- Spread on the yoghurt and add the spinach, tomatoes and cucumber before adding the cooked halloumi.
Top tips
You can use any protein such as chicken or tofu instead of halloumi.
