Make way for your new Summer salad! This Mediterranean Salad is perfect for meal prep and packed with goodness. Don’t let the prep time put you off. It can be made in 5 minutes using pre-cooked quinoa, I just chose to cook it myself to make it cheaper.
The Mediterranean diet has many health benefits. Numerous different health conditions could benefit from following this style of eating, including people living with PCOS, menopause, type 2 diabetes and IBS.
Ingredients
- 200g cooked quinoa
- 1 tin chickpeas, drained and rinsed
- 9 cherry tomatoes, diced
- ½ cucumber, diced
- 1 red onion, diced
- Handful dill, roughly chopped
- Handful parsley, roughly chopped
- 1 packet of rocket or salad leaves of choice
- 60g feta
- Caesar salad dressing
Method
- Cook the quinoa as per instructions and allow to cool before assembling (this is what takes the most time to prepare, you could use pre-cooked quinoa for quickness).
- Assemble your salad by adding the sauce, then the chickpeas, quinoa, salad leaves, tomatoes, cucumber, red onion, herbs and feta.
- Leave in the fridge for up to 3-4 days and simply pour out into a bowl and mix well to enjoy!
Top tips
Buying dried quinoa and cooking yourself works out cheaper. However, if you’re short on time then pre-cooked options can help to make this meal quicker.
Did you know that quinoa is a complete plant protein? This means that it contains all nine of the essential amino acids that our body needs and cannot make on it’s own. Quinoa is also gluten free so can be eaten safely by those with Coeliac disease or gluten intolerance.
You could make your own Caesar dressing using 2 tablespoons of tahini, 1 clove garlic, lemon juice, 2 tablespoons of olive oil, 2 teaspoons of oregano and black pepper.
