Mediterranean Meal Prep Salad

  • 200g cooked quinoa
  • 1 tin chickpeas, drained and rinsed
  • 9 cherry tomatoes, diced
  • ½ cucumber, diced
  • 1 red onion, diced
  • Handful dill, roughly chopped
  • Handful parsley, roughly chopped
  • 1 packet of rocket or salad leaves of choice
  • 60g feta
  • Caesar salad dressing
  1. Cook the quinoa as per instructions and allow to cool before assembling (this is what takes the most time to prepare, you could use pre-cooked quinoa for quickness).
  2. Assemble your salad by adding the sauce, then the chickpeas, quinoa, salad leaves, tomatoes, cucumber, red onion, herbs and feta.
  3. Leave in the fridge for up to 3-4 days and simply pour out into a bowl and mix well to enjoy!
