This Simple Shakshuka is a healthy, flavour-packed one-pan dish made with eggs baked in a rich tomato and pepper sauce, topped with creamy feta and fresh coriander. Inspired by Mediterranean and Middle Eastern flavours, this easy shakshuka recipe is perfect for breakfast, brunch or a quick high-protein dinner.

Ingredients
- 1 tbsp olive oil
- 1 large onion, diced
- 2 bell peppers, sliced
- 2 garlic cloves, crushed
- ½ tsp cumin
- ½ tsp cayenne pepper
- 1 tbsp tomato purée
- 1 tin chopped tomatoes
- Handful fresh coriander, chopped
- 4 eggs
- 40g feta, crumbled
- Black pepper, to taste
- Sourdough bread, to serve
Method
- Heat the olive oil in a large frying pan. Add the onions and peppers and cook until softened.
- Add the garlic and cook for a further 1-2 minutes. Add the cumin and cayenne pepper.
- Add the tomato puree, stir to combine and add the tinned tomatoes.
- Simmer for around 10 minutes, until the volume of liquid has reduced and you get a saucy consistency.
- Make 4 wells in the sauce and break each egg into a cup before pouring into each well. Cover (either with a lid, a plate or some foil), and cook for 5-8 minutes or until the whites of the egg are set but the yolks still runny.
- Sprinkle over the feta and coriander and serve with your sourdough bread. Enjoy!

Prefer it milder? Reduce the cayenne pepper or swap for smoked paprika.

The tomato sauce can be made ahead and stored in the fridge for up to 3 days. Simply reheat and add fresh eggs when ready to serve.
