Spicy Salmon Burger

  • 2 salmon fillets
  • 1/4 cup panko or breadcrumbs
  • 2 tbsp low sodium soy sauce
  • 3 chopped spring onions
  • Handful of chopped parsley
  • 1 tbsp dijon mustard
  • 1 tbsp sriracha
  • 1 tbsp sesame seeds
  • 1 tsp garlic powder
  • Pinch of salt & pepper
  • 4 tbsp greek yoghurt (or mayo)
  • 2-3 tbsp sriracha
  • 1 red onion, thinly sliced
  • 1/2 cup red wine vinegar
  • 1/4 cup hot water
  • 1 tbsp sugar

For serving

  • Wholemeal roll or brioche bun
  • Rocket
  1. Pulse the salmon in a food processor until ground or mash with a fork until its broken into flaky pieces.
  2. Transfer to a bowl and mix well with the remaining burger ingredients .
  3. Form into 2 palm sized burgers.
  4. Heat a frying pan over a medium heat with a teaspoon of oil. Add the burgers and cook for 4-5 minutes each side, or bake at 190C for about 12-15 minute, flipping halfway through.
  5. To make the onions, simply combine the ingredients in a bowl and leave for around 30 minutes.
  6. To make the sauce, mix together the greek yoghurt and sriracha.
  7. Serve on a wholemeal roll or brioche bun with a handful of rocket, the sauce, onions and side salad.
