This spicy salmon burger packs a punch with sriracha and zingy onion dressing. A great source of omega 3, this recipe is great for your heart and your tastebuds.
Time: 30-40 minutes Serves: 2
Ingredients:
For the salmon burger:
- 2 salmon fillets
- 1/4 cup panko or breadcrumbs
- 2 tbsp low sodium soy sauce
- 3 chopped spring onions
- Handful of chopped parsley
- 1 tbsp dijon mustard
- 1 tbsp sriracha
- 1 tbsp sesame seeds
- 1 tsp garlic powder
- Pinch of salt & pepper
Sriracha Sauce:
- 4 tbsp greek yoghurt (or mayo)
- 2-3 tbsp sriracha
Pickled onions:
- 1 red onion, thinly sliced
- 1/2 cup red wine vinegar
- 1/4 cup hot water
- 1 tbsp sugar
For serving
- Wholemeal roll or brioche bun
- Rocket
Method:
- Pulse the salmon in a food processor until ground or mash with a fork until its broken into flaky pieces.
- Transfer to a bowl and mix well with the remaining burger ingredients .
- Form into 2 palm sized burgers.
- Heat a frying pan over a medium heat with a teaspoon of oil. Add the burgers and cook for 4-5 minutes each side, or bake at 190C for about 12-15 minute, flipping halfway through.
- To make the onions, simply combine the ingredients in a bowl and leave for around 30 minutes.
- To make the sauce, mix together the greek yoghurt and sriracha.
- Serve on a wholemeal roll or brioche bun with a handful of rocket, the sauce, onions and side salad.
