Spicy Vegan Sausage & Bean Casserole

  • 1 tablespoon olive oil
  • 4 vegan sausages
  • 1 onion, finely chopped
  • 1 stick celery, chopped
  • 1 clove garlic, finely chopped
  • 1 bell pepper, chopped
  • 1 tablespoon chipotle paste
  • 1 tablespoon tomato puree
  • 1 tin chopped tomatoes
  • 150ml reduced salt vegetable stock
  • 1 teaspoon dried oregano
  • 1 tin beans, drained (I used butter beans)
  • Handful fresh parsley, chopped
  • Black pepper to serve
  1. In a large pot, heat the oil over a medium heat and add the vegan sausages. Brown for about 5 minutes then remove on to a plate.
  2. In the same pot add the onion, garlic, celery and peppers and cook for around 5 minutes until softened.
  3. Add the chipotle paste, tomato puree, tinned tomatoes, veg stock and oregano and combine well.
  4. Bring to a simmer before adding the sausages.
  5. Season with pepper and cook for 15-20 minutes until the sausages are cooked and the sauce has thickened.
  6. Add the beans and cook for a further 5 minutes. Serve with chopped parsley and serve on it’s own or with rice, potatoes or some crusty bread.
