Warm up your winter nights with this spicy vegan sausage and bean casserole. A hearty blend of plant based goodness packed with nutrition to nourish your body and soul.

Ingredients
- 1 tablespoon olive oil
- 4 vegan sausages
- 1 onion, finely chopped
- 1 stick celery, chopped
- 1 clove garlic, finely chopped
- 1 bell pepper, chopped
- 1 tablespoon chipotle paste
- 1 tablespoon tomato puree
- 1 tin chopped tomatoes
- 150ml reduced salt vegetable stock
- 1 teaspoon dried oregano
- 1 tin beans, drained (I used butter beans)
- Handful fresh parsley, chopped
- Black pepper to serve
Method
- In a large pot, heat the oil over a medium heat and add the vegan sausages. Brown for about 5 minutes then remove on to a plate.
- In the same pot add the onion, garlic, celery and peppers and cook for around 5 minutes until softened.
- Add the chipotle paste, tomato puree, tinned tomatoes, veg stock and oregano and combine well.
- Bring to a simmer before adding the sausages.
- Season with pepper and cook for 15-20 minutes until the sausages are cooked and the sauce has thickened.
- Add the beans and cook for a further 5 minutes. Serve with chopped parsley and serve on it’s own or with rice, potatoes or some crusty bread.
Top tip
You can use any beans or pulses such as black beans, kidney beans, chickpeas, cannellini, pinto or baked beans
You can swap the vegan sausages for any other type such as pork or chicken sausages.
