This sweet chilli halloumi flatbread is a quick and satisfying lunch packed with flavour. Crispy halloumi, fresh vegetables and creamy yoghurt are topped with sweet chilli sauce for a simple meal ready in under 20 minutes.

Ingredients
- 30g halloumi, sliced
- ½ red pepper, diced
- ¼ cucumber, diced
- Handful spinach
- 1 tbsp Greek yoghurt
- 1 flatbread
- Sweet chilli sauce
- Drizzle olive oil
Method
- Cook the halloumi in an air fryer or frying pan with a little olive oil for 10–12 minutes, until golden and crispy.
- Once the halloumi has around 5 minutes to go, toast the flatbread for 1–2 minutes until warm either in the toaster or under the grill.
- Place the toasted flatbreads onto a plate and spread the Greek yoghurt over the flatbread. Add the diced pepper, cucumber and spinach.
- Top with the crispy halloumi and drizzle with sweet chilli sauce before enjoying as a quick lunch or light dinner!
Top Tips
- Swap the flatbread for a pitta or wrap for an easy on the go lunch option
- Add avocado or hummus for extra creaminess
- If you want to mix up the protein source, instead of halloumi you could use chicken or tofu
