Vegan Cheesy Pasta Recipe

Time: 15 mins Serves: 2

Ingredients

  • 150g whole wheat pasta or about 2 handfuls dried pasta of your choice
  • 4 vine tomatoes, diced
  • 3 cloves garlic, crushed
  • 2 white onions, diced
  • 250ml plant based milk (I used oat milk)
  • Pepper to taste
  • 1 tsp dried sage
  • Handful chopped fresh basil
  • 2 tbsp nutritional yeast
  • 1 tsp olive oil

Method

  1. In a large frying pan, add the oil and fry the tomatoes and sage with lots of pepper
  2. Whilst this is simmering, add your pasta to a pot of boiling water
  3. Add the garlic and onion to the frying pan and cook for 6 minutes
  4. Pour in 2 ladles of the pasta water to the frying pan, along with 250ml of your plant based milk and stir well
  5. Drain your pasta, add this to the frying pan and add the nutritional yeast and basil and cook for a further 2 minutes
  6. Serve between two bowls and enjoy!

Top tip: you can up the fibre by using wholegrain pasta or if you want some extra protein, lentil pasta can be a good choice!
