Ingredients
- 150g whole wheat pasta or about 2 handfuls dried pasta of your choice
- 4 vine tomatoes, diced
- 3 cloves garlic, crushed
- 2 white onions, diced
- 250ml plant based milk (I used oat milk)
- Pepper to taste
- 1 tsp dried sage
- Handful chopped fresh basil
- 2 tbsp nutritional yeast
- 1 tsp olive oil
Method
- In a large frying pan, add the oil and fry the tomatoes and sage with lots of pepper
- Whilst this is simmering, add your pasta to a pot of boiling water
- Add the garlic and onion to the frying pan and cook for 6 minutes
- Pour in 2 ladles of the pasta water to the frying pan, along with 250ml of your plant based milk and stir well
- Drain your pasta, add this to the frying pan and add the nutritional yeast and basil and cook for a further 2 minutes
- Serve between two bowls and enjoy!
Top tip: you can up the fibre by using wholegrain pasta or if you want some extra protein, lentil pasta can be a good choice!
